Tipe!

Browsing through travel photos from the chef of Tartine* in San Francisco, I was struck by this dish pictured below.
Reading its description, I learned that the main ingredient was non-other than our old friend, Tripe!

Who knew tripe could look so appetizing!

The tripe is grilled and served with fennel, cabbage and coriander.
