Sushi Stars

"Jiro Dreams of Sushi" is an upcoming documentary about Jiro Ono, an 85-year-old Japanese "national treasure." His story is certainly an interesting one: his ten-seat sushi restaurant in Tokyo, Sukiyabashi Jiro, is humbly located in a subway station– yet it has earned three Michelin stars, the first sushi restaurant to do so. Of course, being a sushi Mecca, Sukiyabashi Jiro can afford to charge brow-raising prices for its dishes: the "Chef's Recommended Special Course" comes in at nearly $400.

I would definitely be excited to taste sushi at Sukiyabashi Jiro– paying so much to eat in a subway station has got to be an experience in itself, right? Though I'm not the most adventurous sushi or seafood eater, I'd gird myself if I would be eating at such a prominent sushi joint. Some of Ono's particular preparation techniques are outlined on the restaurant's website– for example, keeping the sushi rice at body temperature, and making the rice vinegar more sour in the summertime. Such delicate, careful preparation would undoubtedly beat even the most authentic sushi restaurant in America!
