Rainbow Jello in this week's forecast for dessert.

The bright colors of this layered dessert immediately drew me in the first time I saw these on my friend's kitchen counter. Of course I've seen the red, green, orange (and so on) colored jello, but never the colors layered on top of each other. The rainbow jello is appealing and impressive, especially when brought to potlucks. I admit that jello doesn't seem like a real dessert, since it could easily be made from powder packets, if not homemade. However, being more than the average jello, the treat's different colors and attractiveness compels both kids and adults to get a taste of this magical dessert.

Ingredients:
Six (3 oz) boxes of Jello, assorted flavors
8 packets of unflavored gelatin
1 can (14 oz) sweetened condensed milk
Water

Directions:

Oil a 13x9” pan. In a medium saucepan, bring 1 1/4 cups of water to a boil.
When the water is boiling, add 1 box of jello and 1 packet of gelatin. Whisk vigorously to dissolve. Pour into the pan. Transfer the pan to the fridge and chill until set, about 30 minutes.


Boil 1 ¼ cups of water in a medium saucepan. Dissolve 2 packets of unflavored gelatin in the boiling water. When the gelatin dissolves, whisk in the sweetened condensed milk. Divide this mixture into 5 portions. Pour 1 portion over the bottom layer; refrigerate until set, approximately 15 minutes.

In a medium saucepan, bring 1 1/4 cups of water to a boil. When the water is boiling, add 1 box of jello and 1 packet of gelatin. Whisk vigorously to dissolve. Pour into the pan. Transfer the pan to the fridge and chill until set, about 250 minutes. Re-melt another portion of the milk/gelatin mixture and pour over the preceding layer. Refrigerate until set, about 10 minutes. Repeat steps until all packages of jello are used up, ending with a flavored layer.

Refrigerate until serving, at least three hours (preferably overnight.)
